More Gluten Free Fritto Misto

One thing I do quite like is seafood in crispy batter, what the Italians call Fritto Misto.

So after enjoying my recent attempt at gluten free Frito Misto, I thought I would cook it again. I decided though, this time, to try a slightly different recipe.

Again I used the mixed seafood mix from Lidl. As part of their Andalusian range, Lidl had a bag of frozen prepared mixed seafood. It contains pieces of skin-in cod pieces, anchovy fillets, squid rings, chopped Indian squid and peeled shrimp. As I said before I do think there could be more shrimp (prawns) in there, but it is a good mix of seafood.

I took the seafood and defrosted it in a bowl and removed any excess water. I coated the seafood in seasoned flour and then left it for ten minutes. 

I cooked the seafood by deep frying in hot oil. The end result was a crunchy coating on the seafood. I think this was better than my previous attempt.

Though I have bought the Lidl Fritto Misto from their Italy week quite a few times, the reality is that it’s okay, but not good. It’s mainly squid, in a crispy batter. Also, the other downside is, it’s not gluten free.

I took the seafood and defrosted it in a bowl and removed any excess water. I coated the seafood in seasoned flour before coating in a gluten free batter and deep frying in hot oil.

The batter I made from gluten free plain flour, egg and milk. Mixing to a consistency that ensures a smooth coating of the seafood. As well as the seafood I added some prawns and cooked those as well.

Overall I was quite pleased with the dish, it was better than the Lidl Fritto Misto I have had before. The only issue I did have, was that the batter didn’t stay as crisp as I would have liked.

Free Glazed Doughnut

So there I was in Cabot Circus in Bristol in the early evening, anticipating a visit to the cinema, but doing some shopping before the film.

I noticed that people were going into Krispy Kreme being given a glazed doughnut from the conveyer belt and walking out. So I went in and I got a free doughnut from Krispy Kreme. They appeared to be giving away their excess stock.

In the past I haven’t thought highly of the Krispy Kreme doughnuts, they’re okay, but nothing special. However who am I to say no to a free doughnut.

Actually this one was still warm and very fresh. It was rather nice, quite enjoyed it.

Lemon Salmon

This is a regular dish in our house. 

I take salmon fillets. To these I had the zest of a lemon, lemon juice, crushed garlic, salt, pepper and a splash of olive oil.

I bake these in the oven for twenty minutes. 

I usually serve these with a vegetable risotto.

Chilango Hotbox

I was recently up in Manchester and wanting lunch. I have been a fair few times to Chilango both in Manchester and in London. 

Back in October 2016 I had some great tacos from the Manchester branch of Chilango. So I was hoping to get some of those, however since then Chilango have changed their menu, and they no longer do tacos. I was a little disappointed. In the end I went with a Surf and Turf Hotbox.

A hotbox has “alll the flavour of a burrito” but without the tortilla. This one was served with prawns and steak.

I did quite enjoy the hotbox, there were some great flavours.

Conference Pastries

One thing that I find irresistible at conferences is the small danish pastries that are often served with the pre-conference coffee. It is something I missed from the online conferences I have been attending (due to covid) over the last couple of years. 

Obviously the pastries aren’t the only thing I have missed from in-person events, but having some pastries in London recently I was reminded how nice they are…

I suspect it is something to do with an early start, a couple of hours on the train into London, onto the underground, and then a walk from the tube to the conference venue. By that point I have been up for a while, worked up an appetite and right there on the table next to the coffee are some freshly baked pastries. Just what is needed after a long journey.

That time I had some Chilango Tacos

Back in October 2016 I was staying in Manchester for a conference and had arrived the night before. Across the road was a branch of Chilango, so went there for dinner.

They had an interesting menu, but I was hungry so I went for the plate of tacos with a choice of fillings and salsas, along with a bottle of beer.

The tacos are made fresh to order, and after paying, I took my tacos to a table.

They looked great and were very tasty.

Sweet Chilli Chicken

I wanted a quick meal at Paddington Station, but wasn’t really sure what I was in the mood for. Well I was hoping to get some tacos from Barburrito, which I had really enjoyed on a previous visit. However like Chilango, they’ve stopped selling tacos.

I’ve had the sushi quite a few times from Wasabi at Paddington and have enjoyed it. However I didn’t really want sushi. At the Holborn branch of Wasabi I once had the Sweet Chilli Chicken and didn’t really enjoy it.

I quite like sweet chilli chicken, but in this case the sauce was overpoweringly with sweetness and stickiness, even with the heat of the chilli.

 I did decide in the end to give it another go.

Yes the sauce was, again, overpowering, rather too sweet and had a lot of chilli. Yup, probably not the best choice in the end.

Wood Fired Italian Ham, Portobello Mushroom & Mascarpone Pizza

Rushing about meant I didn’t have time to cook anything special for dinner. So I popped a shop pizza in the oven. I had a Specially Selected Wood Fired Italian Ham, Portobello Mushroom & Mascarpone Pizza from Aldi. It had a great doughy base, good proportion of toppings and some nice flavours. I have had this pizza before and I would have it again.

Should note I did add some extra salami slices and olives to the pizza.

Pork Shoulder Kebab

When I was last in Waitrose I saw in their barbecue range a Mexican inspired pork king kebab

Outdoor-bred British pork (shoulder) is seasoned with a spicy Al Pastor rub which blends chipotle and ancho chilli, black pepper, cumin, clove and cinnamon. Finished with a sticky pineapple, chilli and oregano glaze. 

I did quite like the sound of this, but then I saw the price of £9.50 (£11.88 per kg). Well this put me off slightly and I did think it might me a little too spicy for some.

So I decided to have a go at making it myself. I got some pork shoulder from Aldi, which was £3.19 (£4.56 per kg). This I cut into strips and then rubbed with some pepper and garlic seasoning, and some salt.

I then threaded the strips onto skewers. I used two skewers so that the pork was like a flat slab.

This I then chargrilled on my griddle pan.

Once the pork was cooked, I let it rest and then I sliced the pork off the skewer.

It was rather good.
