Gluten Free Couscous

Looking for gluten free versions of wheat based dishes was always challenging, but becoming less so.

We have always enjoyed the prepared salads from M&S, but alas most of them contain gluten.

I had been looking for a pack of gluten free couscous for a while, so when I saw a pack of Clearspring Organic Corn Couscous this looked like a solution.

It was really easy to prepare I added 100ml of stock to 65g of the dried couscous and left for five minutes. I then used a fork to fluff the couscous. I added some diced cooked Mediterranean vegetables and seasoned with olive oil, white wine vinegar, salt and pepper.

I was really impressed, it had the texture of couscous and worked really well.

African Spiced Lamb Rump

I was up in Manchester staying at the Copthorne Hotel on Salford Quay and went for dinner in the restaurant. I had a table overlooking the water, I settled in and looked over the menu and ordered.

Well after a somewhat disappointing starter, I did have quite low expectations about my main course. I had ordered the African spiced lamb rump with roasted Mediterranean cous cous.

Unlike my starter I got what was described on the menu.

The lamb was nice, tender, but lacked flavour. There wasn’t s lot of African spice there. The cous cous was nice and there were some nice roasted Mediterranean vegetables hidden in there. The dish was dressed with a yoghurt dressing.

I have to say, I did enjoy the dish, it wasn’t that impressive, but it was okay. If I was at the Copthorne again, would I order it again, probably yes.

Within the Oxford Covered Market are many places to grab lunch, either to eat there, or to take back to the office.

The Alpha Bar is one of the most popular establishments, so much so, that the long queues usually put me off from buying lunch from there. Another problem with their popularity is that they often run out of their popular dishes. As a result I don’t go there as often as I probably would like to.

Today the queue was short, so I managed to grab a nice salad. There is plenty of choice, and you can choose small or large. Take a main, such as chicken, feta, tofu or as I chose, grilled halloumi. You then choose a couple of sides, I went with the orzo and pesto, with the cous cous. There are a range of toppings, including pesto, hummus or as I chose, some olives. The halloumi was freshly grilled, which was good, the rest of the salad was tasty and fresh and I thought good value at £3.95.

In addition there are a range of hot choices, such as Tuscan Beef served with potatoes or rice.

As well as food, there are a range of drinks available, and surprising for me I’ve not tried the coffee.

The Alpha Bar does have a few tables outside, but this is generally a place to buy lunch to take away. It does some great food and it is really good value for money. The only real downside for me, is that it is that good, that there are often long queues, so I am often forced to miss them out.

Conference Dining

I don’t go to as many conferences as people often think, but I do probably photograph my food at most of them…

Recently I was attending a review meeting at Aston University and we had dinner the night before at the Aston Business School. Unlike a lot of conference dinners we had a choice, which is always nice. Also not only a choice, but we could choose on the night. Normally choice is either completely limited to a single choice, or if there is a choice you have to make that choice weeks in advance. I’m not a fan of that as often what tickles my fancy weeks ago, is not what I want to eat on the night! So having the choice on the evening I am eating is a real treat.

For my starter I went with the warm tartlet of chorizo, mushrooms and roasted shallots.

In other words a quiche! It was quite tasty and very nice. It was well presented too.

For the main dish, I went with the slow cooked blade of beef with a bourguignon sauce, served with dauphinoise potatoes and green beans.

The beef was very tender and was full of flavour. I would have liked more sauce, as in places the beef was a little dry. The potatoes were great and the beans were beans.

I was tempted by the other dishes on the menu, the slow braised shoulder of Moroccan lamb with North African cous cous when it arrived on the table looked really nice.

The cassoulet of beans with Gorgonzola polenta and roasted aubergine also looked great.

What was nice was that there were two vegetarian options, most times you have the single choice of a mushroom risotto.

So what about to finish with, well I am a sucker for cheese and biscuits and went with that.

Very nice, even with the large amount of celery, which I never eat. I did feel that if you provide four biscuits it would be nice to have at least four pieces of cheese. I felt short-changed with the cheese, it needed more cheese, or more different cheeses.

Must mention the excellent service, any place which has a table of twenty as we did and know who ordered what is a real bonus. The food came out and was served to the correct people. So much nicer than someone holding out a dish and calling out “who ordered the fish?”

Overall it was a really nice meal, nice to have a choice, cooked well, great service and nice surroundings.
