Gluten Free White Chocolate Cookies

Cookies

I have a recipe for gluten free white chocolate cookies which I have been using for a few years now which works really well.

I adapted it from a recipe I had, which didn’t work so well, so I made a few changes.

85g of unsalted butter
100g of light brown sugar
30g of caster sugar
1 teaspoon of vanilla essence
200g of gluten free plain flour
75g of white chocolate chips
1 large egg

Preheat the oven to 180℃ and line two baking trays with baking parchment.

Add the butter to a heat-proof mixing bowl. Melt the butter in a microwave for approx 50 seconds, until just liquid. Ensure it has fully melted. I find that slicing the butter into thin slices speeds up the process.

I once tried melting the butter in a pan, but the butter was too hot so the white chocolate chips I added later then melted. It’s important that the butter isn’t too hot.

Add the brown sugar and caster sugar to the warm butter, stir well.

Now the add the vanilla essence and the egg. Sometimes, depending on the size of the eggs, I replace the single large egg, with two egg yolks.

Mix into a smooth batter consistency.

Sift the plain gluten free flour into the batter and combine into a soft shiny cookie dough. I use to add xanthan gum, but have found it isn’t always necessary.

Add the white chocolate chips

Spoon the dough into small balls onto the baking trays.

Put them into the oven to bake for 10-12 minutes.

They are ready when they are starting to brown slightly but will still be very soft. Leave them on the tray to cool for five to ten minutes before transferring carefully to a wire rack to cool.

This recipe makes about twelve cookies.

Spoon the dough onto the baking trays and flatten the dough mix into cookies.

Put them into the oven to bake for 10-12 minutes.

This recipe makes about twelve cookies.

Gluten Free White Chocolate Chip Cookies

The process I used is pretty much the same as the process I have used on other cookies I have made.

Ingredients

225g of unsalted butter
125g gluten free bread flour
125g gluten free plain flour
1 egg
1 egg yolk
100g caster sugar
120g light brown sugar
1 pack white chocolate chips
One teaspoon salt
One teaspoon bicarbonate of soda
Two teaspoons of vanilla essence

Melt the butter in a pan and bring to the boil, stirring frequently. The aim is to boil off some of the water off the butter. Once the butter melted and had turned slightly brown this was removed from the heat and cooled to room temperature. I find it is better if it is room temperature, too warm and the cookies are not as good.

Cream the liquid butter with the sugar, vanilla essence. The idea is to mix it until it is light and fluffy. Use an electric mixer if you have one, ours was broken, so I did it by hand, which was hard work. Beat in the eggs until they are incorporated into the mixture.

Combine the flours, salt and bicarbonate of soda.

Stir in the dry ingredients a third of it at a time until it is incorporated.

Using a wooden spoon fold in the raspberry and white chocolate.

Chill.

Place six small balls, about 2-3cm across, of dough on a baking tray and bake for 6-9 minutes.

This quantity of ingredients will make about eighteen cookies.

After cooking leave on the tray and then after three minutes move to a rack to cool further.

Eat!

Gluten Free White Chocolate Chip Biscuits

I made some gluten free white chocolate chip biscuits or cookies using my normal recipe which is in this blog post. This is the same recipe that I use to use before I needed to bake a lot of gluten free cakes and biscuits.

Ingredients

      • 1 standard egg.
      • Take the same weight of the egg in cold butter.
      • Twice the same weight of the egg in plain gluten-free flour.
      • Same weight of the egg of sugar.
      • Vanilla essence.
      • Handful of white chocolate drops or chips

Take the flour, and add the cold butter, cut into small cubes. Combine the butter and flour by rubbing the butter into the flour, until there are no lumps and the mixture resembles breadcrumbs.

Then stir in the sugar and the white chocolate chips. You could of course use milk or dark chocolate chips if you prefer.

Add the egg and vanillla essence combine until the biscuit dough is smooth.

How you could take spoonfuls onto a banking sheet, but what I do is wrap the dough in cling film and cool in the fridge for a fair few hours. This firms up the dough, so then you can roll it into a 2cm roll of dough and then slice it into 1cm rounds.

These rounds can the be placed onto a baking sheet or tray.

Bake in a pre-heated oven, at 180 degrees for about six minutes until the edges are brown. Be careful as they will go from done, to overdone very quickly.

Place on a cooling rack.

Enjoy.

These can also be the basis for homemade rocky road as well.

They are quick to make and quick to bake.

One tip I have is to crunch up and screw the baking parchment into a ball and then unscrew it. This means it lies flat on the baking tray. The biscuits will spread to about twice their original size, so leave plenty of space around each

Bake in a pre-heated oven, at 180 degrees for about six minutes until the edges are brown.

Place on a cooling rack.

Space

Leicester College Court

Now and again I have to attend conference dinners, most of the time they are like “just okay” mass produced meals that are served without care, then there are those meals which become a really nice memory. At a recent training programme in Leicester College Court I did have a really nice meal. As well as being really well cooked and presented it consisted of things I hadn’t eaten before.

For the starter we had ‘Life on Mars’ this was described on the menu as planet’s surface with the fresh Leicestershire goats cheese, pickled mushrooms, herbs and porcini soil.

The “surface” was a savoury sponge that I have seen before on cooking programmes, but not eaten. It was a nice texture to add to the flavoursome goat’s cheese. I wasn’t enamoured with the pickled mushrooms, but they did add a contrast in flavour. The porcini soil added a nice taste and another texture.

For the main course we had pan fried spiced Gressingham duck breast with a duck leg pastille, salsify, sweet potato and Romanesco.

The duck breast was perfectly cooked, but I felt lacked seasoning and my portion was a little on the small side. The first plate I was given had a decent duck portion but was missing the pastille, so I was given a different plate, but a smaller portion of the duck breast. The pastille was interesting, cooked duck leg in filo pastry, something that might be called a spring roll. Again lacked flavour. I do liked grilled Romanesco, but when grilling something like Romanesco or cauliflower it really needs to be served straight away. It had been left too long since cooking and as a result was a little soggy and lacked the crispness that grilling can impart, nice flavours though. I enjoyed the sweet potato done two ways, a nicely cooked disc and a puree. The salsify was interesting but didn’t add much to the dish.

Desert was described as a chocolate and honeycomb moon, though to be honest it looked more like that space station.
