Tomato Sauce

This is a nice and simple yet tasty tomato sauce.

Take a small (or half a large onion) and dice finely.

Take half a red pepper and dice finely.

Soften the onion and pepper in a large frying pan with a splash of olive oil.

When the onion and pepper are nearly cooked you can add some chopped mushrooms (but this is optional, however they do add a really nice flavour).

Once the mushrooms are cooked add a good splash of balsamic vinegar and turn up the heat.

Now add a tin of chopped tomatoes or passata. I usually just use a tin of chopped (or whole) tomatoes and then whizz it in a blender. Add some tomato puree and cook for at least fifteen minutes.

It goes well with a lot of dishes, meat, fish or vegetarian.

I served mine with plain rice and thin pork loin steaks which I had covered in flour, then egg and then breadcrumbs and shallow fried.

Mozzarella Salad

This is a quick and easy salad or starter.

Take a mozzarella ball and cut into thin slices, arrange on a plate.

Add some sliced tomatoes, I actually used halved cherry tomatoes. You can either interleave the tomato with the mozzarella or place the tomato halves in the middle of the plate.

Scatter some small basil leaves across the cheese and tomato.

Dress with some white wine vinegar, some fine olive oil and freshly ground black pepper.

Serve.

This is a simple easy recipe for cooking chicken.

One of the key things about cooking chicken this way is that it stays really nice and moist with lots of flavour.

Firstly take four chicken thighs, now you could use a whole chicken, half chicken or other chicken pieces. I much prefer chicken thighs over the breast meat as it has a lot more flavour (in my opinion).

Cannelli Bean Salad

I was inspired to make this by a cannelli and chorizo salad I found in Morrisons, but decided I wanted to make it myself using fresh(ish) ingredients.

I took one can of cannelli beans, I did think about using dried, but tinned are so much easier (no cooking required). These were washed, drained and put in a bowl.

I added some good olive oil, a dash of balsamic vinegar, cooked pancetta and red pepper, chopped sun dried tomatoes and a good grind of black pepper.

Tasty.

Spanish Chicken

Tonight I had a very nice spanish chicken dish (that was cooked for me). Containing tomatoes, mushrooms, onion, potatoes and chicken and cooked in a single pot, it was delicious. The main seasoning was freshly ground black pepper which to me gave it a very spanish feel, as did the potato.

Bruschetta

A variety of bruschetta with cheese, tomatoes (fresh and sun-dried), artichokes and mushrooms.

Start off with a ciabatta, though in theory you could use a baguette or french stick (and I have done so).

Slice.

Butter one side only.

Add topping.

Dribble olive oil over.

Bake in a hot oven for less than ten minutes.

Serve.

Eat.

Red Pepper and Tomato Salad

A salad I made which included red pepper, lettuce and cherry tomatoes. It was dressed with some white wine vinegar, olive oil and a dash of freshly ground black pepper.

I do make variations, this just so happens to be one I remembered to photograph!
